You guys.  Give me your favorite recipe that freezes well, and/or your favorite quick meal.  If I am going to be on call for 30 hours followed by 12 off followed by 14 on, for a month, I'm not gonna want to cook ( Read more... )

I have no idea the ACTUAL name for this, but it sounds something like "giambrodt" when my dad says it. Anyway, you cut up a potato into small-ish, mouth-sized pieces. Ditto for a sausage. Cook in a big pan with some veggies. (If you like peppers, those are good. I sometimes use asparagus. Spinach is always a yummy addition. Whatever kind you want, basically.) When the potato and sausage are almost done, add some cut up tomatoes to the pan, too. (You put them in last because you want them to be warm and squishy, but they def don't need to cook nearly as long as everything else.) At the very, very end, break an egg over the top of it all, and leave on the stove for another minute or two until that's cooked. Voila. Delicious ( ... )

Oh my god that thing with the egg sounds awesome. Like, I think I have the stuff and I may make it tonight, awesome. Also it's like all the food groups on a plate which is fantastic and exactly what I was looking for.

Ditto salads and goulash. :)

OH! And I got the book you sent me; thanks so much! It's great--my favorite is the alphabet poem that doesn't look like the alphabet at all but sounds like it when you read it aloud.

Hmm. There is always hummus and pitas and salads. Or "whole grain" hummus as a friend calls it: add the ingredients of hummus to a container, add a can of rinsed chick peas, shake, eat. I suppose you could make a quiche and have it ready in the freezer. I am also a fan of hot dogs (you could insert soy dogs here too). They're easy to cook fast. Frozen vegetables and ramen/thai noodles have been my primary quick food. Also canned beans + rice + salsa = a meal. And also polenta + salsa also makes a 4-minute meal.

Taco lasagna....stacks like lasagna, but you use flour tortillas, a meat/onion mix (which I have the recipe for) and cheese as the layers. Makes a 9x13 pan, which you could cut into individual portions and freeze. Reheats great. Let me know if you want it.

Are you vegetarian? I totally don't remember. If so, I have a couple of cookbooks I could scan, too. Moosewood and Enchanted Broccoli Forest.

Yeah, I think I'm gonna do rice etc--I'm a BIG soup/chili person but it is going to be HOT this month. I may make lasagna though.

One of my fave meals is O Pasta (because my husband nearly had an orgasm the first time he tried it).

You mix browned ground beef with an 800ml/28oz can of diced tomatoes, a packet of onion soup mix, 1 tblsp of oregano and 2 cups of water. Bring to a boil and then mix in some noodles (I like the shell ones best for this). Then let simmer for about twenty minutes, or until the noodles are cooked. Stir in cheese about two minutes before serving, then EAT. I like to mix in a tin of mushrooms, too, but the customising options are way open.

It's yummy on the second day too, so makes a great take-to-work lunch/dinner.
