Quinoa Creation

1.5 cups of rinsed quinoa
1 sweet potato, chopped into 1/2" bits
1 bell pepper, chopped
1 medium onion, diced
3/4 cup almond slivers
3/4 cup unsweetened cranberries
3 tbs Ghee
1/2 tsp cumin (heaping)
1/2 tsp cinnamon (heaping)
3 cups of chicken broth
4 tbs fresh chopped cilantro

Chop Potato and steam for 10 minutes, save the water if wanted

Melt Ghee, saute onions in it for 2-3 minutes, add quinoa and peppers, saute 2 minutes. Add potato water, broth, potatoes and spices. Bring to boil, reduce heat, cover and simmer for 10 minutes.
At the same time, roast almonds in 350 oven for 5-10 minutes. Add Cranberries to quinoa mixture. Cook for another 5 minutes or until fluid is gone. Add cilantro and almonds, serve.
