My church is having a potluck lunch this coming Sunday and as I was one of the last to sign up for a dish, I got stuck with the dreaded "main dish". I'm hoping my slow cookers can help me out here.
My husband will get there at roughly 9:15, I'll get there at 10:15am, Mass starts at 10:30 and the potluck will start a little after noon. Either my husband or I can plug in the slow cooker in the kitchen.
I'm trying to find a slow cooker main dish recipe that:
--can be cooked and ready in <3 hours, but without needing to be watched or removed promptly when finished
--is something that can be safe to sit (on low, if necessary) for ~1 hr or so on the buffet
--doesn't require bowls
Requiring a fork or spoon to eat is fine. Vegetarian, meat, or fish are all fine; inexpensive ingredients ideally. Oh, and not too much prep work, because I have a 7 month old and it's all I can do sometimes to dump things in the crock and turn the knob! I have a 4qt and a 6qt slow cooker, neither of which has a "warm" setting or timer. There will be a LOT of dishes (the list of names nearly covered both sides of a paper) so people will probably only take a little of this and that, so a recipe that serves 8-10 normal portions is fine.
It's been hard to find something that is done in only a few hours yet doesn't need to be watched, so I turn to you,
what_a_crock.
Alternatively, would it be possible to partially cook a recipe, keep it in my fridge over night, and then finish it up the next day? Has anyone done that? Like a recipe that is 8-10 hours on low, cook it for 6 hours on Saturday, and give another 3 on Sunday?
As an offering to the group, I made this
Latin Inspired Spicy Cream Chicken Stew yesterday and it was really good! I did change it to match what I had on hand... hot red salsa, frozen corn, and more vegetables/less beans.
Edit: I ended up making meatballs with peanut sauce, and they all disappeared, so I guess they were a hit! :) Thanks to everyone who commented, sorry I can't reply individually.
