I made a beef stew the other day, and it was a huge hit in my house. Especially since biscuits go so well with it, and my bro-in-law is OBSESSED with my biscuits. lol
All the veggies used were fresh/raw. <3
*note* My crock is 7qts, so I use A LOT of everything. I love this because I can use a TON of Garlic, Onion, and Shallots with out taking room away from the other veggies. :D
I started by putting the stew meat in the bottom of the crock, added about 1/2 cup of flour, some salt and pepper, garlic powder, basil, liquid smoke, and some worcestershire sauce and mixed that all up.
Then I layered on top of that,
Red onion
Shallots (2-3)
Garlic (whole head) (I crush the cloves and throw them in whole)
Then Baby Reds/Yellow/and Purple Potatoes (cubed)
Baby Carrots (cut in half)
Grape Tomatoes
Green Beans (cut into bite size pieces)
Poured some Barley on top
Then poured in Low Sodium Veggie Stock until the crock is full, placed a few Bay Leaves on top
Cook on HIGH for 2 Hours, then switched to LOW for about 10 hours.
I just threw it on at about 11pm, that way it was ready for lunch time the next day. I made biscuits (1 cup bisquick, 1 1/3 cup multigrain pancake mix (from trader joes) and 1 cup of milk) to go with the stew and it was amazing! I love me a good stew or soup. Tonight, or tomorrow Ill be making a Chunky Tomato Soup. With biscuits of course. XD
