Temperature fail

So, I'm having a dilemma. I poked through the tags, because I felt like I'd seen questions like this answered here before, but I couldn't find it. Because I suck.

Anyway, my crock cooks SUPER hot. I'm finding that if I cook something on low for 6 hours, it burns at the edges, even if the crock is full. I keep wanting to put things in before work and come home 8 hours later to find a tasty dinner, so I keep trying it.

So I have the remains of a week-old singed dinner in my crock still. I've been soaking it in soapy water and scrubbing it every day for the past week, and it won't come OUT. It's like, black and crusted in the edges. Any tried and true methods for cleaning a crock? Although if it gets destroyed, at least it's an excuse to try a different type of crock...
