Chicken Tacos in the Crock?

My husband is having a bunch of friends over at the end of the month for a steam-up on the garden railway. He's asked me if I could make something in the crock pot for everyone to nibble on, and has specifically requested tacos. I stupidly asked him "beef or chicken" and he replied "chicken".

So.

How do I do chicken taco filling in the crock? Do I cook the whole chicken in the crock, then shred the meat and put it back in with seasonings? Do I get boneless cuts to cook/shred? Do I pre-cook the chicken in the oven and then shred it and put it in the crock?
