With the big food event latter this week I thought I might share something I've done in the past and has turned out fantastic.
I had often gotten the left over turkey, whereas all the fun and easy stuff to re-heat went elsewhere. I'm not a big turkey fan esp. re-heated. I generally make this as a casserole, but my attempts at it as a crock pot dish have also turned out well.
need:
left over turkey
cream of chicken soup
canned diced tomatoes
canned green beans
cheese
noodles
for the caserole I go back and forth between straight layering, and mixing all up, for the crock, I definately mix it.
take the turkey, cut it up into small peices or cubes, and place it in the crock,
mix in the cream of chicken soup -- depending on how much fluid you want you can add the water to the cream of chicken, I generally don't,
mix in the tomatoes
mix in the green beans
for the caserole, I would place the cheese on top and then a layer of crackers, in the crock, I hold off on the cheese until not long before I serve it if at all.
and the serve over noodles.
I've also found it works well for just about any left over meat ( have not tried with fish) if it's poltry based use cream of chicken, and if it's pork or beef, use cream of mushroom.
Last night I did the casserole version as I got some of the ingredients late, and also used cream of mushroom. and am enjoying the leftovers now :D
