Glazed Autumn Pork Roast

It's just starting to get nippy in the DC area, so I found this recipe online and decided to give it a whirl:

Peel two medium yams and cut them into two-inch chunks. Place on the bottom of the slow cooker. (You could just as easily use red potatoes if you or your family don't like yams.)

I'm definitely going to try this! I think I'm going to add either some broth or some apple cider for extra moisture, because mine will definitely have to stay in for 8 hours. I wonder which would be better -- would the cider be overkill on top of the honey and apples?

I don't think it would be overkill... maybe use the original amount of honey with the cider to not have so much sweetness?

I'll do that. BTW, it's just me, too. How much mileage did you get out of a 2-pound roast? I'm so lazy that I try to get about 6 meals out of my crock pot recipes. Did you have leftovers?

i got three meals out of the 2 lb--each meal had about a fist size quantity of meat with two scoops of the veggie/fruit mix.

if you wanted six meals out of it, i would try a 3 lb roast, 4 yams, and 2 apples, otherwise i think meals 4-6 would just be meat lol
