So, pickles? + a super awesome shortribs recipe

I was reading in another cooking comm about what to do with excessive amounts of vinegar. Someone mentioned pickles and crocks in the same breath so I thought I would IMMEDIATELY run over here to pose the obvious next question:

Does anyone have any pickling in the crock recipes?

Also, I just made this the other night. Curried short ribs. I didn't bother shredding the meat as suggested, just served it with bone-in (because c'mon, short rib bones are tiny.)
