I've ended up with three-- a 1 1/2 quart, a 2 1/2 quart, and a 4 quart. I use the middle one most when cooking for just me and the hubby, the bigger one when our daughter is visiting.
The most important thing for me is to go for the maximum number of temperature settings; having a Warm setting is really helpful since many newer crocks run really hot on Low.
I have a Rival 5 qt. I like it. It's handy to have a huge one because I have stuff to freeze, and the crock comes out separately for washing. My last one was smaller and the crock didn't come out and that SUCKED when I tried to wash it.
I think that all the new crockpots run high. All of mine are old ones and run at the old fashioned settings. No drying out of the food. I was fortunate to have inherited a rival that was made in the 70s. :)

I think mine runs high-ER than the one my mom used to have, but it doesn't go at a rolling boil on low! And I just bought it a couple months ago. My roommates old one did not either, and hers was about 2 years old.
