Root Vegetable Soup

So, butternut squash looked good yesterday in the produce aisle.

1 large sweet onion, chopped
4 good sized carrot, cut up
1 large potato, cut up
1 large butternut squash, cut up
32 oz chicken stock
Garam Masala *
Pumpkin Pie spice *

*to taste

Dump it all in a set it to low all day... puree when done. I serve with creme fraiche on top. I'm thinking of also serving with finely diced apples piled on top.


 


I don't think the squash could have been any fresher
