Hi everyone! My name is Shelley and I'm new here. I love my crockpot and use it 2-3 times a week. I work 4 evenings a week, so having something in the crock is the easiest way to make sure that dh and kids will actually eat a decent meal :)
I thought I'd share something I made yesterday, that the kids actually liked!
Chunky Beef Vegetable Soup
1 lb stew meat, cut in 1 inch pieces.
2 bags frozen mixed veggies
2 large potatoes, peeled and cubed
1 small onion, diced
3 Tbsp beef bullion (I used the no-sodium kind)
1/4 cup ketchup
3 cups V8 juice
2 cups hot water
Salt and pepper to taste
Put the water and V8 juice in first, then stir in the bullion. Then just dump everything else in, mine cooked on low probably about 6 hours. I didn't brown the meat first. It came out really good! Even picky children liked it. Dh can't stand vegetables, but he said he really liked the meat. Next time I make a roast, I'm considering cooking it in water and V8 juice with beef bullion and ketchup :)
