That is pretty much what my weekend was about. We had friends over for dinner on Friday evening. It was good to pick the brains of someone else in the midst of wedding planning and get some ideas. It was also good to just feel vaguely normal for an evening. And yummy food! I've decided that one thing I can do with this lj is to post recipes to let a few friends know about any particularly nice things I've stumbled across. We had Moroccan spiced chicken with couscous and roasted veggies. Here's the spice combo I used for the chicken:

Moroccan spiced chicken
1 tsp orange zest
2 tsp cumin
2 tsp coriander
2 tsp ginger
1 tsp hot chili powder
1 tsp coarsely ground black pepper
1/2 tsp turmeric
1/2 tsp cinnamon
1/2 tsp sugar
1/2 tsp salt
1/4 tsp ground cloves

Mix the spice mix with 1 Tbsp olive oil to make a paste.  Pat chicken breasts dry and coat in the paste.  Refrigerate for a minimum of 30 minutes.  Saute and serve.
This mix should be enough to coat 4 chicken breasts from most supermarkets or 2 to 3 of the huge, happy, free-range ones we get from our local butcher shop.
Try it! Seriously!

We also had Jack's parents over for lunch on Sunday. I had planned to do a proper Sunday roast, but it wasn't a very good day for me. We ended up going out to eat. I still put together some bread and butter pudding though.

As for the filing, that is an ongoing project that pretty much started on Friday when I went to tidy up. I tried to move one pile of mess but kept finding other piles of mess everywhere I tried to put it. In the end, the only real solution was to dive in and do some proper sorting and organization. I'd hoped to put it off until I was finished with Uni work, but it was getting too hard to find things. It still isn't done, but it is at least under control. I can tackle that bit by bit on days when I'm too tired to do real work.

Off to the neurologist tonight. I find it rather disturbing that the neurology appointments are only in the evening. What if he's a vampire or something?
