There are several foods I'm willing to eat at any time any day, anywhere, no matter what.
Eaten a huge dinner? Still room for it.
Walked into someone's fancy dinner party where I'm supposed to be classy? Screw etiquette if it's on the table.
Two foods fit THAT bill. The first? Popcorn.
The second? Cashews.
amd here do we begin
* 1 3/4 cups raw cashews
* 3 tbsp freshly squeezed lemon juice
* 1 x small to medium clove garlic
* 1/8 cup chives (or the tender green portion of green onions), roughly chopped
* 1 tbsp fresh dill (or 1/8 cup, packed, fresh basil) roughly chopped
* 1/2 tsp sea salt
* freshly ground black pepper to taste
* 1 1/3 cups water
* 2 tsp extra-virgin olive oil
1. In a food processor, combine all ingredients, starting with 3 tbsp lemon juice and 1/3 cup water.
2. Process and scrape down the bowl several times, and continue until the spread is very smooth and thick.
3. Taste, and if you'd like a more lemony flavor, add an extra ½ tbsp of lemon juice.
4. To thin the spread, add an extra 1-2 tbsp water and puree until thinned to desired consistency.
5. Spread on bagels, toasted breads, crackers, flatbreads, or use as a dip for veggies.
