Easy chocolate Mayo Cake
I adapted this recipe because I was out of oil. It's simple, and was all finished except baking in just a few minutes. This make a single 9-inch layer...no double layers. Double the recipe if you'd like to make a layer cake.
Ingredients:
1.5 c self-rising
1c sugar
3 tbls cocoa powder
1 c water
1/3 c mayo
Dash Vanilla extract
Mix dry ingredients well. Add water, mayo, and vanilla until just mixed. Don't overmix.
Bake at 350 40 minutes until done (a toothpick should come out clean when inserted in the center).
Let cool a few minutes in pan before turning out onto a cooling rack.
