My fiance and I finally had a catering win on Monday!
We've been struggling to find a caterer since January. (Dear god, since JANUARY.) The first place we chose ended up booking another event on top of ours, and then never called us to tell us. The second place we chose refused to give us a list of food choices/prices, and after calling them no less than 8 times, we finally gave up on them. Everywhere else in town simply was not equipped to deal with 150-200 guests. Until a new restaurant came to town last month!
It's a small chain called
Carinos, based in NM and TX only. I really wanted to work with a small business that was based entirely out of my town because my town is little and poor and needs the cash flow. However, these guys were super duper professional and organized, which is exactly what my explody brain needed. They sat us down at a table in the restaurant, gave us drinks, and then brought out different plates of food for us to try. It was phenomenal.
Aside from a few appetizers and a side salad, we chose two meat options and one veggie to offer to our guests. The veggie is a beautiful angel hair pasta with mushrooms and massive artichokes. The first meat option is a rosemary and lemon roasted chicken breast with green beans and garlic, and the last (the pièce de résistance, IMO) is a green chili and chicken lasagna. It tastes like fluffy amazing enchiladas and will be perfect for the out of town guests who have never been lucky enough to try a famous New Mexico green chili. I'm thrilled beyond all reason!! :D
The best part is it's priced in a bundle. The service, the travel to the venue and the flatware are all included, and when we crunched the numbers with the restaurant manager, the price was modest enough to fit into our budget. (Minimum $1,400 maximum $2,000)
After months of fighting, it looks like we finally won and will have a feast of epic proportions!
