I do not have this particular problem, but here's what I would do.
Something along this wording line... *A note to our guests: Reception food will include shrimp and a peanut-butter chocolate cake. If you have special requests or food allergies, please contact Bride's Mom at xxx-xxx-xxxx.
I am one of those who can't eat shellfish, so I appreciate the thought behind it.
Some ideas:
- include a line on an RSVP card, if you are having one that says "I have dietary restrictions or allergies, please contact me to discuss my needs further"
- Or maybe a line by wherever you have reception info that says something like, "We would like to accomodate guests who may have dietary restrictions. Please contact us at *insert here*

I feel like I need to give a little more info than just dietary restricitons, but the wording is about right for the veggies and those who keep kosher.
How about something like, "We have provided what we think will be a well-rounded menu to accomodate a variety of tastes and dietary restrictions. However, we recognize that we could not create a menu that would provide options for everyone, and we would like to do so. Please contact us if you have any allergies or other meal-related concerns so we can make sure to plan accordingly. Thank you."
I think simple is better as was stated in a previous comment.

We would like to accommodate our guests with food restrictions. If you are vegetarian or kosher, have sensitivity to peanuts or seafood, or if you are concerned about your food allergy, contact xxxxxx at (xxx) xxx-xxxx to discuss special arrangements.
As the wife of a person who has food allergies that are not to any of those items, and with a lot of family with food allergies to things other than what is on your list, I would simply say:
"Please contact us with any special dietary restrictions."
And not single out the specific items you will be serving. Because if I were to read it otherwise, I might think we are SOL with Sweetie's issues.
