mmm...chili...mmm...
Here's my Mom's recipie (as below would serve 4 comfortably, with leftovers):
1 lb ground beef (ground turkey for lower fat content, or higher "Kill Doug" content)
2 cans beans (1 can black beans or dark red kidney / 1 can light red kidney)
1 huge can whole peeled tomatos
1 can tomato sauce
1 can tomato paste (the little one)
1 onion (medium dice)
2 celery stalks (diced)
1/4 - 1/2 green pepper (diced)
chili powder
salt / pepper
cayanne
Dice the onion (medium) and brown with the ground beef.
Open the beans, drain and rinse.
Put the tomatoes (not the juice, just the tomatoes), and 1/2 of each can of beans in the blender to desired consistency.
Drain the meat after browning, then just combine all other ingredients in a large sauce pan.
Season to taste. Basically this means that you start with the chili powder and cayanne and sprinkle it in until it starts to smell like chili. Then once it's cooked for a little while, give it a taste and add from there.
Claire makes some great cheddar rolls from Bisquick and cheddar, and with some Amstel Lights it makes for a very nice meal. I highly recommend the cheddar rolls. Follow the Bisquick recipie for biscuits and mix in some sharp cheddar to the dough and cook as usual.
Oh, and we don't like celery so I leave that out.
Prep time: About 10 minutes to dice everything.
Cook time: About 20 minutes, although if you have the time to leave it on low for a longer period of time, oh man, that's good eatin'.
