Rocky Road Cupcake and Lychee Cupcakes!
For a while now, there's been a few ideas for cupcakes that has been knocking about in my brain, and hence, on the reason 'just because' I tried them out!
Rocky Road cupcakes! The base is vanilla coconut, with raspberry sauce swirls. With a centre of marshmallow cream, and embedded at the bottom, some raspberry candy.
Then covered in chocolate icing, and decorated with a mini-oreo, chocolate sprinkles and almond slivers. I've tried some of the cake part, and it is unexpectedly good :) I tend to find coconut cakes a bit dry, but these shouldn't be, since it has marshmallow cream in them :D
And I also made lychee cupcakes! The cake base is vanilla with raspberry sauce swirled through, and the centre is filled with lychee.
And I decorated it with some white chocolate icing, metallic cachous, and edible pink glitter. Oh yes, new additions to the clay macarons collection:
They turned out quite nice.
And the completed mochi bunnies!
That is all from me! I suspect I won't be able to make any more cupcakes anytime soon, so these would be my last batch for a while! I hope my guinea pigs friends, like them tomorrow! Wahahaha!
