I saw an interesting recipe on the Once a Month mom website as part of their meal plans called the Lasagna Cupcake. They got it from this
site. That particular recipe uses wonton wrappers. I figured I would use proper lasagna noodles but make them myself. Once I cook them I can cut them down to fit the muffin tin and have it fairly healthy as well. I will have to take pictures when I get that far.
I am still using mom and dad’s manual pasta maker which needs the dough very much dryer than the ones made with the mixer. I had my brother help me with it again. We started off with 3 cups of whole wheat flour, 5 eggs and 5 tablespoons of wheat gluten. I mixed that together and my brother said it still sounded wet. After adding another ½ cup of flour I was kneading it on the counter. Fortunately, at that point my brother took over because it takes a lot of work. I’m not sure how much flour he added but when he was working on it I could see the counter bending under him. He puts a lot of work into it. I can see why he bought a machine to do it. I should have taken pictures of the dough before I ran it through the machine but I did manage to get some pictures of the noodles themselves and the dough just before I ran it through the machine.
