Diet chicken?

I suppose  210 calories for a half pound serving isn't too bad. I've never broiled chicken; it sems strange that 30 minutes total cooking time would be enough.

broil chicken that long = burned chicken in my experience.

bake it about an hour on 350, then test with a thermometer.

Chicken (along with pork) I'm always afraid of under cooking.

you can ALWAYS cook food further, but you cannot save food that's overcooked to the point of it being burnt to a crisp. undercook it, then test. if you don't have a thermometer, invest in one.

Yes! Especially with steak, prime rib, etc.

I really need to get a better meat thermometer. Mine is about 6-7 inches long, and only seems to work if it's inserted all the way to the top, which is fine on large turkeys and beef roasts, but not so great on smaller cuts of meat.

is it digital or analog? i noticed the same problem with my analog one...upgraded to a digital and it's leaps and bounds better than the old one.

i liked it so much i got a second one to use as a candy thermometer. i use this one - having the probe helps, i think.

It's analog; I've never tried a digital one. With analog, are they supposed to be inserted and left in the meat the entire cooking time? That's how I've always done it.

I'm asking because I'm guessing the digital one doesn't get left in the oven, lol.

yes, analog thermometers are to be left in the oven. the one i showed you can be used either way...the probe goes in the meat, the digital bits stay outside. OR you can use it as an instant read.

Hmm ... yes, I need one of those. I'm definitely an "instant reading" kind of guy. My analog one has turned brown on the glass face and is almost impossible to read, anyway.
