Vidding is highly technical, but eventually you get the hang of it and it becomes second nature when going through all the preparation to make fan videos.
1) How do you make small clips out of a movie-length video for assembly into a fanvid? Is there any specific software I'm missing that is good for this?
There are several steps to get there, but I use Mpeg Streamclip to pull my clips from my footage.
2) How do I take the audio (dialogue, soundtrack music, etc.) off the clips? When you pull your clips into your video editing software it will be separated into an audeo timeline and a video timeline.
1. Rip the DVD using Mac the Ripper (I don't know the PC equivalent) 2. Use MPEG Streamclip (this is Mac or PC software) to create a Mpeg file from the VOB files. This Mpeg file is where I will pull my clips from. 3. Open video editing software, set up the file and beginning pulling in clips and music. 4. Export file 5. Use Mpeg Streamclip to export/compress file to a smaller file for YouTube.

Everything I learned was from Foolish Passion, a fan video community. It's has lots and lots of information there on how to do it. It can be overwhelming but take it step by step.
