Lemon-Zested White Bean and Escarole Soup

 This simple soup takes no more than 15 minutes max and you have a delicious pot of tasty soup!

Lemon-Zested White Bean and Escarole Soup:
Ingredients:
1 Tbsp extra virgin olive oil
3/4 cup thinly sliced white onion
2 cups firmly packed shredded escarole
1 large garlic clove, minced
4 cups chicken broth
1 can cannellini or white beans, drained
2 tsp lemon zest (or lemon juice if you really love lemon) 
1/8 tsp hot pepper sauce

Instructions:
1. Heat the oil in a large pot over medium heat. Saute onion for 2-3 minutes. Add the escarole and garlic and saute for another 2 minutes. 
2. Add the broth and beans. Increase the heat to high and bring to just a boil. Remove from the heat and add lemon zest (or lemon juice) and hot pepper sauce. Enjoy!
