I thought I'd post something that I made for dinner last night, as it was really good (and simple!) and even my meat eating husband loved it. :)

I made tofu 'meatballs' from:

Firm silken tofu,
Rolled oats,
Bread crumbs,
Garlic,
Onion,
Mixed Herbs,
and a lil soy sauce.

Mixed that all up, formed into small balls, then rolled in breadcrumbs and baked till they firmed up a little and the breadcrumbs browned. I did this about noon, then let them cool down and refrigerated.

Later that night, cut up various mixed veges (whatever you want - I used green and red capsicums, string beans, mushrooms, courgettes, carrot, broccoli), mixed in 3 Brothers Garlic and Red Wine pasta sauce with the veges, put the tofu balls on top with a lil exta pasta sauce and a lil vegetarian cheese, then baked again.

YUM!

Really simple, but VERY good. My husband commented that the balls could have been a little firmer - and I'd make them from that tofu that isn't silken (I don't know what it's called heh) next time. I just used this stuff because I bought it on accident. :)
