Cherry and Goat's Cheese Salad with Mint Dressing

I had this for dinner tonight; I wanted salad since it's so gorgeously hot. It is enough for a light main meal, but it would also be great as a side or starter. The flavours of the cheese, cherries and mint complement each other very nicely and there's a lovely contrast with the crunchy salad vegetables.


Salad:
- a quarter of a lettuce
- a quarter of a cucumber
- 2 spring onions
- 50g goat's cheese
- 5-6 cherries

Dressing:
- 20ml mint sauce
- 20ml balsamic vinegar
- ground black pepper to taste

Chop the lettuce, cucumber and spring onions and arrange them in a salad bowl or plate. Slice or crumble the goat's cheese and halve the cherries, and arrange them on top. Whisk the mint sauce and vinegar together with some pepper and drizzle over the salad.
