You don't have to use the cheese. Some people have made it without. Do you have tofu? I bet it would work in place of the cheese, and then you could top it with whatever you wanted.

in this case, i don't think i would like tofu as a substitute. i assume i'd have to use silken tofu, but i feel like that would alter the texture too much.
i suppose they could be made without any kind of cheese-like topping. maybe some day i'll try. :)

They are, and I usually hate cooked veggies. I prefer them raw, but this is sooo delicious. Almost as good as the faux hash browns.

Oh? Faux hash browns? I'll have to look into that one! I tend to steam my veggies, I don't like them soft but I do like them a little cooked.

I omitted the bacon, and used low sugar ketchup. Couldn't tell the difference, to be honest.
