My house was getting too clean, so I decided to waste 2 days baking and let other things pile up again. I'm good at that.
(Extra) Outrageous Cookies

http://allrecipes.com/Recipe/Outrageous-Chocolate-Chip-Cookies/Detail.aspx They called for oatmeal but I was out (not quite sure how that happened as I've never in my life ran out of oatmeal before...that stuff multiplies on it's own.) so I used cornflakes instead - turned out EXTRA awesome! Like nuts but not so....nutty. I also only baked them for 8 minutes. I like soft, chewy cookies...not lumps of coal. I would never bake a cookies for 12 minutes! They don't like it when you do that.
I doubled the batch and froze about 40 cookies to have on hand for picnics. They freeze beautifully, throw them into a lunch bag and they will thaw by lunchtime. Much tastier than an ice pack. Or you could just eat all 40 in one sitting, that works too.

How to make the ultimate veggie lasagna:
Gather up some veggies and cheeses.
Give your toddler a huge carrot so he can pretend he's Bugs Bunny and give you some peace. "What's up doc?"
Chop, mince, dice, and slice your veggies and toss into a wok with some olive oil. I used mushrooms, carrots, bell peppers, zucchini, onion, garlic, broccoli, and tomatoes. Add some salt and herbs.
Make an Alfredo style sauce using butter, flour, cream, Parmesan cheese, and spinach. (Your arteries will start panicking at this point but just eat another cookie and they will calm down.)
Make your cheese mixture by combining cottage cheese, ricotta cheese, mozzarella cheese, and herbs.
Layer noodles, white sauce, cheese mixture, and veggies in a pan 2 or 3 times. Top with mozzarella.
Bake that bad boy until it's done - mine took an hour!
Let stand for a few minutes to thicken and serve, goes well with a garden salad and fresh garlic bread.
Now I know what you are thinking...."Mary, what about calories? cookies .... cheeses.... cream... BUTTER!"
I would guess that if you eat 1 piece and 2 cookies....that's only around 2.3 billion calories. If you are concerned you can skip on the garden salad. Which means you have more room for another cookie...which you can eat while you look around your kitchen that is totally messy from 2 days of baking and your house that became trashed while your kids ran wild while you were baking. Isn't baking fun!
You can now decide if you want to clean your house....or dig out the 40 cookies in the freezer.
