My first attempt at a quiche turned out... not really quiche-like, even if it tasted alright. This second attempt worked out a bit better. It looks more like a pizza than a quiche because I didn't have a round form, but it tasted perfectly quiche-like!
puff pastry
2 onions, chopped
2 bell peppers, chopped
lots of brie (I'm not sure how much I used)
fresh chives
two cloves of garlic
two eggs (maybe one would be enough as well)
a bit of milk
crème fraîche
a bit of red chili
flour
olive oil
pinenuts
parmesan cheese
Preheat oven to 200°C.
Spread the puff pastry with a rolling pin until it fits your baking form.
Toast the pinenuts.
Mix the brie, milk, eggs, crème fraîche, chili, garlic, flour and chives until you have a smooth mixture. Season with some black pepper.
Saute the onions in some oil until tender. Add the bell peppers, leave to simmer.
Spread oil in a baking form, dust with some flour (otherwise the quiche will stick to the form, as experience has taught me).
Put the pastry in the form. Add the onions and the bell peppers, then spread the brie mixture on top of that. Sprinkle the pinenuts over the quiche, then top with some grated parmesan.
Bake for about 15 minutes, or until the quiche is brownish.
Serve and enjoy!
