INGREDIENTS"
~ 1 table spoon of vegetable oil
~ 1 large onion chopped
~ 2 large stalks of celery
~ 2 1/2 teaspoons italian seasonings
~ salt and pepper if desired (i always skip out on the salt)
~ 1 (28 oz) can italian sytle dice tomatos (i used one fresh tomato and some salsa as the other tomato i saved for something else.)
~ 5 cups of vegetable broth
~ 2 large sweet potatos, peeled and diced
~ 2 large carrots, sliced thin
~ 6 oz green beans cut thin (i used up one of the last cans of green beans i had instead of fresh this time or u can use frozen)
~ 5 cloves garlic, minced
Directions:
Heat oil in a soup pot over med-high heat. Saute onion, celery, italian seasonings, salt and pepper until tender, about 5 mins. Stir in tomatos w/juice, broth, sweet potatos, carrots, green beans and garlic. Bring to a boil; reduce heat to low and simmer, stirring occasionally, until veggies are tender about 30 mins.
Serves around 4-6
