i was in the mood for some south of the border flavor.
1 package (8) wheat tortillas
1 14 oz can red beans
1 package uncle ben's 90second brown rice
1 package taco seasoning
1 package shredded monteray jack cheese
preheat oven to 350. nuke the rice, toss into a bowl with the red beans and seasoning and enough water to make it saucy-like. mix in as much shredded cheese as you like. spoon the mixture onto half of a tortilla shell and then fold the other half over and seal. when done put into the oven for like ten minutes, so everything heats up nicely.
i was uber lazy and basically just wanted rice and cheese and taco flavoring. these are easily customizable to add whatever else you might want.

spinach pasta.
-boil some pasta.
-in a seperate pan heat some chopped garlic [a clove or two] and half a chopped onion. add a package of chopped spinach [16 oz] and heat thoroughly.
-when the pasta is done drain and put back into the pot. throw in the spinach mix. add a good pat of butter and about a cup or so of cream and about a cup or so of parmesan cheese.
all in all i guess you can really take a short cut and just buy one of those frozen packages of cremed spinahc and toss that into the pasta instead of going about the long way. not sure how'd that would turn out though.
