bananas

Our house is over run with bananas at the moment. My housemate has cooked two loaves of banana bread and I just did a dozen muffins. And we still have heaps of bananas left!

Bananas are awesome, naturally sweet and full of potassium, there are heaps of different varieties which can be used in all sorts of cooking. They also make an excellent egg ( Read more... )

In a sweet recipe such a s a cake, biscuit, muffins etc one medium squashed banana will generally work as an egg replacement. Alot of people also use half a cup of applesauce, but that involves alot more effort I think (ie cutting and cooking and mashing the apples). Applesauce or soya milk can be used to replace much of the oil in a cake recipe (just make sure you factor in the sweetness).

That was the verdict at work.

I also saw the blondies recipe you posted to the food blog and was half tempted to make those instead of these :)
