Our house is over run with bananas at the moment. My housemate has cooked two loaves of banana bread and I just did a dozen muffins. And we still have heaps of bananas left!

Bananas are awesome, naturally sweet and full of potassium, there are heaps of different varieties which can be used in all sorts of cooking. They also make an excellent egg replacement when veganising recipes.

Tasty banana chocolate chip and date muffins (which are different to the chocolate banana mini-muffins I used to make in Fiji)...

Find the following
5 mashed bananas
1/4 cup vegetable oil (I used olive)
1/4 cup soya milk
1/4 cup agave nectar
1/4 cup maple syrup
2 cups wholemeal self raising flour
1 cup wholemeal plain flour
1/4 cup chopped chocolate pieces
1/4 cup chopped dates
2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon nutmeg
pinch of salt

Do the following
* Preheat the oven to 180C.
* Mix the bananas, soya milk, oil, agave, maple together in a bowl.
* Add in the cinnamon, nutmeg, salt, chocolate pieces and dates.
* Slowly add the flour and baking powder, mixing as you go. The mixture should be quite thick and not runny at all.
* Spoon into greased muffin tin. I also added a piece of chocolate on the top of each muffin for decoration.
* Cook until cooked through (about 20min- use the toothpick test to check).
