Can you go to the grocery store with her, when she goes next? Or could she give you a small food budget for your stuff, and you could go to the store yourself?

For me, working with my family was just too difficult, so I got a job and went to the store by myself and bought my own food... your mom sounds like she's much more open to this, so hopefully she'll work with you. Even so, though, a part of going vegan that I came to love was being in control of my own food and being able to choose what I eat. I think you'll enjoy the transition a lot more if you take charge of it as much as you can.

Before you go to the store next, maybe take a look through some recipes first and pick some simple things that sound good - it's a lot easier if you go with recipes in mind, rather than wandering around randomly picking things and getting home to find out that you're missing one or two things that you need. And I say simple because some cookbook recipes have long ingredients lists and uncommon spices and it can end up being expensive if you don't already have a well-stocked kitchen (this was discouraging for me when I first started learning to cook). Some of my super simple favorites:

Chard and beans
Chickpeas and artichoke hearts
Cuban black beans & rice
Burritos (tortillas and beans are cheap!)
Creamy Chickpea Curry (I skip a lot of the ingredients and just make this with the chickpeas, coconut milk, cherry tomatoes, and onion/garlic/regular curry powder.)
Scones (The one posted by Kate, not the first one.)
Muffins
Berry Cobbler (Don't alternate the batter though, just put it all on top.)
