Family issues....

So I'm a new vegan, I went straight from being an omnivore to vegan.
Growing up, my family was vegetarian for a short period of time, maybe a year or so and I developed a taste for a lot of the substitutes that my mom would fix and that was back in the 90's when some of the substitute things weren't exactly the greatest tasting.
But anyway, so mom introduced me to vegetarianism at the age of 7.
The rest of us complained enough one day she finally gave up.
Well, me and my brother got a little bit older and when I was in highschool we decided to try it again. We did our own research and found out how avoiding the use of animal products actually WAS beneficial, and hey- our mom was right!
So for that one summer we tried to be vegetarians again.
Then my brother just decided he wanted to eat healthy and he didn't care if he ate meat as long as it was organic or at least not fried in lard or something disgusting.
Well in past recent months, it just kinda dawned on me that I don't know why I ever quit.... veganism is something I wholly support, and so I figured if I stand behind it so much I really aught to be practicing it.
So I've been doing pretty good so far, it's been about a week and a half since I made the switch.
My chronic stomach issues have completely gone away, and I decided I never want to go back.

I like being healthy, and plus I'm underweight so I need to be paying more attention to my diet anyway.
And of course I want to help the environment and animals.
Well tonight I said something about my latest vegan research and my brother called me a yuppie.

It was a little bit disgruntling considering I don't fit in anywhere and never have.

And to top things off, my family is on a budget right now and my mom doesn't really remember what kinds of foods to get so I wind up eating one meal a day now.
Basically, I'm happy with the switch I've made, but my family isn't really adjusting with me very well. Mom said if I'll write some things down on the grocery list for her she'll get them, and she has started buying tofu for me. So please don't think she isn't willing to help. She's doing great but the downside is she hardly ever goes to the store. It may be another month.
How did you guys handle things with your families when you first made the switch to being vegan? What's the best way to handle skeptics, and what foods can I live on for a few weeks? We have brown rice and potatoes and green beans so I'm gonna try to make that work and probably buy a few of my own groceries.
