Even Shortstop, a 24 hour sandwich sort of place has vegan stuff... a really good seitan sandwich. Diamonds, the indian restaurant downtown is better than the indian place in college town, even though it doesn't look as good. Viva has decent (and very vegan friendly) Mexican. OOH! OOH! My favorite non-Thai place in Ithaca is Just a Taste. It's a tapas bar with amazing food. If you go you can ask what is or could be made vegan and they'll mark the options for you, and they're
