pizza would definitely be good - i like lots of roasted garlic in addition to the sauce. you can just ask them to carpet the thing in whatever your favorite veggies are. same thing with pasta; at my last work function a dish of pasta sauteed with olive oil, garlic, portobellos, and sundried tomatoes was a huge hit. another pasta dish i've found to be oddly satisfying is pasta in marinara with cumin and slivered almonds, but YMMV. fried tofu is rather good, if you feel like consuming that much fat. of course there are always salads. and... if you feel like making them work for it... you could find a cookbook you like (i'd choose veganomicon) and ask them to make you dishes from it.
I am a fan of whole wheat pasta w/ garlic, cherry or grape tomatoes, steamed zucchini, and olive oil. Cracked red pepper tops it. You can also get away with steamed veggies and a side of roasted potatoes for combating the alcohol....
I second the veggie burgers & fries idea, and vegan pizza, and maybe see if they can do a grilled veggie sammich? I know those are kind of overdone, but when I'm at the pub I usually talk them into making me one and it's yumtastic.
