Vinegars, rice vinegars specifically
I was wondering if anyone can tell me how rice vinegars are made? Because I know that gelatin is used to some extent to purify some vinegars, but I was wondering if anyone knew whether that was the case with rice vinegars as well? The reason I ask, of course, is that it's commonly used in sushi, and I rather like veg*n sushi, but I thought of this now.
