Actually -- to think of it this way: species are always on the look out for the 'healthier' mate -- to ensure healthy offspring. This is why our ideas of whats attractive have changed.
In the middle ages and a couple hundred years afterwards, it was popular to be pale. Pale was the color of people who stayed inside most of the time, they weren't out in the fields working -- they were wealthier. Therefore, they were 'healthier' and provided more for a baby.
Today, the popular skin color is 'tan'. That is because now, to be tan means you don't work in an office all day and you are out at your leisure, shopping, hanging out by the beach/pool etc.
What is attractive changes with our culture because of what appears to be 'healthier and stronger' at the time. But all in all, it has to do with biology.
