I don't have any recommendations re: soy and breast cancer, but as for the book I'd say get her The China Study

When I asked Dr. Michael Greger for the best book on diet and disease, he recommended The China Study.

For a doctor promoting the health benifits of (healthy) vegan eating: Dr. Fuhrman. He even has a book or two on the subject.

As for soy and breast cancer... the current advice is still to avoid it for several years following treatment.

However, you don't need soy to be vegan. Not by a long shot.

The Vegan Society's nutrition pages are very reliable, and Stephen Walsh, chair of the International Vegetarian Union's science group (and a trustee of the Vegan Society) wrote Plant Based Health & Nutrition, which cites lots of medical papers and is wonderful because it goes into technical detail in each chapter, but then summarises the information in a really easy to read style. It's available in the US from Vegan Outreach's catalogue.
