Tonight I tried something a bit different, a gnocchi-ravioli type dish. They were each about the size of my palm and stuffed with a mix of Bac'un Bits, onion, and green pepper. I served them with tomato sauce, white peaches and spinach salad.
This is a yummy vegan carrot cake based off the one in VwaV. One big difference was that I took out the nuts and added raisins. There is Tofutti cream cheese in the middle with pineapple pieces. It is so very good that I probably shouldn't make too many of them. (It seems to be going quick) I don't feel too bad because of the amounts of vegetable and fruit mixed in there. ;)
