Raw vegan dip

hey guys, just wanted to share this vegan raw dip that I've made today - really good with some veggies for a hot summer day.
It actually does taste like ranch but better, here's the details:






Ingredients:
  • 1 cup of raw cashews, soaked overnight (so about 8 hrs) - soaking makes it creamier
  • 2 small cloves garlic, cut
  • a small bunch of green onions chopped
  • 1-2 large basil leaves chopped
  • some black pepper to taste
  • 1 tsp sea salt
  • 1/3 cup virgin cold pressed olive oil
  • 1/3 cup apple cider vinegar
  • 1/2 cup filtered water
  • 1-2 large dates, remove seeds
  • 1/4 of a small red or white onion chopped
  • 3 tbsp of dill
  • lemon juice (1/2 lemon)

Preparation
You'll need a good powerful blender, such as VitaMix that I use. Drain the water from cashews. Place all the ingredients into the blender, and mix them until you get a nice creamy paste. If it is too thick, then add some water until you get a desirable consistency. Put the dip into a container, and keep it in the fridge for about an hour to cool. Then serve it with pieces of carrots, cucumbers, mushrooms, tomatoes and any other vegetables you love. Enjoy! :)
