Lots of soymilk

Someone gave me two gallons of soymilk - one light vanilla and one light plain - that I don't know what to do with. I was planning on making biscuits and such but that only takes a cup or so...basically I need to get rid of this stuff before it goes bad (they're already opened ( Read more... )

That was going to be my suggestion.

The way my mu made it, she would use about 8cups of milk, so your soymilk would be gone in no time.

Or do what I did yesterday, and accidentally quadruple the amount of milk in a recipe =/

Otherwise just bake bake bake!

If you like pudding that will use up a lot. You could make the chocolate turtle truffle torte from vegweb (it's delicious and if I recall uses soy milk? it might be mostly margarine though).

I'm not much help, sorry. I have trouble going through a little 1L box of almond milk before it goes bad...

Also, consider "creamy" soups and use soy milk instead of cream or milk.

or

maybe make bread and replace any liquid with soymilk? This might work best with soft breads.
