mandarin oranges

i have easily over 100 mandarin oranges in the house right now. i've put as many as I can in the fridge so that they'll keep for a while longer. but I still have a whole lot sitting outside.

What can I do with them...??! HELP! haha. thanks :D

Marmalade!

(It's usually made with sour oranges, but mandarin oranges work just as well if you add some acidity to the mix. I just did a quick google search and http://www.wrightangle.com/food/blog/2008/12/26/satsuma-mandarin-orange-marmalade/ looks really good.)

What about sorbet? If you have a food processor it's really easy to make. Just peel, seed and chop up your oranges. Make a simple syrup (1 cup water + 1 cup sugar, dissolved and then boiled for one minute) for every three cups fruit, approximately. You can add orange zest, ginger, or whatever spices/flavors you might like to your simple syrup. Puree the oranges with the syrup in your food processor and pour into a tupperware or baking dish to freeze. One it's completely frozen, pull it out of the freezer and let it defrost for a bout five minutes, cut it into chunks and toss it back into your food processor--this will break it down and whip air into it so it has that nice smooth texture.
