Vegan Chocolate Cake

It's suppose to be Red Velvet cake, but sadly I never am bold enough to put in enough beet juice,
and I don't have / want to use red dye. So, if you would like to experiment yourself with the coloring, feel free!
Otherwise, it makes a very nice, simply sweet chocolate cake.



Utensils Needed:

- 2 bowls
- 1 bunt pan (or two 8" circle pans, but bunt works best)
- Hand mixer

Ingredients:

(Dry)
- 3 cups of flour (all purpose, cake flour or gluten free works fine)
- 2-3 tbsp of cocoa powder
- 1 tsp of baking soda
- 1/2 tsp of salt

- 1 cup of sugar* (you can use any sweetener you wish.. if you're using something like agave nectar,
you may want to use a little less than 1 cup)

(Wet)
- 1 small banana, mashed
- 2 tbsp olive oil
- 1 tbsp white vinegar
- 2 cups of unsweetened almond milk
(or soymilk, doesn't necessarily have to be unsweetened either..could be flavored if you wish)

- 2 tsp of vanilla extract (alternately, almond extra tastes nice as well)
- Experimental amounts of either beet juice or red dye! haha

(Topping)
- Confectioner's sugar
- Vegan icing*

* Vegan icing can be made with 2 cups of confectioners sugar, a few tbsp of almond milk / soymilk,
1/4 cup of vegan margarine (earth balance), and vanilla extract.

Directions:

*) Preheat the oven to 350 degrees
Coat your pan with vegan margarine (earth balance)

1) In one of the bowls,
"Cream" together the banana and the sugar
Then add the oil, the milk, and the vinegar.
Mix well.

2) In the second bowl,
Mix together the dry ingredients with a fork.
Add the dry mixture into the wet mixture,
and give it a couple stirs with the fork.

3) With an electric mixture,
blend for 1 minute on low-medium speed.

4) After the minute is up, add your coloring.
When you have the coloring (you may skip adding color if you want)
blend for another 1 minute.

5) Pour the batter into the bunt pan (or evenly into the two circle pans)
and put into the oven.

Allow to bake for 30 minutes at 350 degrees (preheated!)
rotating halfway through the baking process.

Once baked, check with a knife if the middle is done, and allow to cool in the pan for 10 minutes.
Then, allow the cake to completely cool.

If you are frosting the cake, wait until it is completely completely cool.
If you are just dusting it, you don't have to wait as long.

This cake is nice enough without any toping though,
and goes well fruit!
