An Iraqi version of mujadra (a lentil and rice stew) which tastes yum yum yum. This redipe is for 6 courses.



Ingredients:
2 cups of persian or whole rice
1 cup of red lentils
4 spoons of oil
3 finely chopped garlic cloves
1 spoon of cumin (or turmeric)
4 spoons of canned mashed tomatos or canned tomato dices
3 1/2 glasses of boiling water
1 (or half a spoon if you don't like too much salt) spoon of salt

How to make:
Heat oil in the cooking pot and add garlic. Fry garlic until it's golden but no more. Add the cumin/turmeric and mix. Add rice, lentils and tomato mash and mix. Add the boiling water and lower the cooking flame. Cover the pot with cooking foil and leave for 10 minutes. Come back, mix the ingredients some then re-cover (with the foil) and leave for 20 more minutes. Come back and make sure the rice is prepared. If it isn't, add more water, re-cover and check again every five or so minutes.
