A banana dilemma!

So I've got some bananas (probably 6 or 7) that I've been meaning to make banana bread with. I'm talking super ripe, mushy brown bananas. Unfortunately, we're going through another ridiculous heat wave and it's way too hot to even think about using the oven. You can stick them in the freezer for now and make the banana bread later when the weather is cooler.

Just remember that if you are going to freeze the bananas, it makes things a lot easier if you peel them first. A frozen banana with the skin still on goes from being a cold, solid lump with the skin welded on, to a leaky bag of semi-liquid banana goo, without there being a middle phase where it's an easily peel-able fruit. It is far better to take frozen, peeled banana out of the freezer and leave it in a bowl to defrost. I learned that one the hard way.

That's interesting...I've never peeled them before freezing them. Maybe I'll try that sometime.

I absolutely agree - nothing nastier than trying to peel off that half frozen skin (and you ~always~ leave a thin residue behind) because you want it to defrost already!

Now I peel bananas and even break them into chunks before tossing into a baggy and into the freezer.

Although chunks are not always the best thing if you're going to be baking because you want to make sure you have the right number of bananas.

I just peel them frozen and have never had a problem. Throw them in the freezer whole, peel and all, take them out, peel them, then let them defrost. They've been perfect every time. In fact I have 8 of them in my freezer right now and just used three of them to make banana bread over the weekend.

I use a paring knife to peel frozen bananas, and it works a treat. No need to deal with liquidy thawed banana while removing the skin!
