Spicy tomato "sausage" soup

This is a soup I came up with at the supermarket because they were out of the artichokes I had planned on making for dinner, so I needed a quick idea of something to make without a recipe in front of me.

Ingredients:
-1 large onion, sliced
-2 cloves garlic, minced
-2 serrano peppers, minced
-1/2 bell pepper, diced
-4 large beefsteak tomatoes, wedged
-2 Tbsp cilantro
-1 cup water
-1/2 cup nondairy milk
-3 Tbsp oil or margerine, separated
-1 cube of fake chicken or veggie boullion
-1 tube of Gimme Lean sausage, diced
-Tortilla chips

Method:
Sautee the onions in 1 Tbsp of oil or margerine until they are tender, then add the peppers + garlic + sautee for about 5 more minutes. Next, add the tomatoes, water + boullion + simmer covered for about 20 minutes. In the mean time, sautee the "sausage" in the remaining oil or margerine until it is browned. After the vegetable mixture is ready, add the cilantro and nondairy milk, then blend until smooth. Finally, mix in the sausage, serve + garnish with the chips.
