Spicy garlic white bean dip

Sep 10, 2008 20:37

I was wanting a hot white bean dip, but I couldn't find the specific recipe I have made before. I have been short on cash lately, so I wanted to make something I could make from my pantry and garden and this is what I came up with. This turned out to be so out of control delicious that I just had to share it. If you don't have all these fresh herbs lying around, I'm sure you can use dried.

ingredients:
-2 cups cooked white beans
-1 handful fresh parsley
-1 handful fresh cilantro
-1 Tbsp fresh chives
-1 tsp fresh oregano
-3 Tbsp lime juice
-1 hot pepper(I used a habanero), more or less to taste
-4 cloves of garlic
-Salt and pepper to taste

Put all ingredients in a blender or food processor, then blend until smooth. Scoop the mixture into an ovenproof dish and cook at 350 degrees F for 20 minute. Serve with tortilla chips, crusty bread or raw veggies.
