I threw together a mexican-style casserole to get rid of some old stuff lying around and my VERY omni parents gobbled it up (they still don't know I'm vegan, hehe). The way I ended up doing it was just throwing stuff together.
If you're interested, it's as follows... tomato/spaghetti sauce in bottom of pan to keep noodles from sticking (homemade is the best). Whole-grain lasagna noodles on top.(they longer they cook in the water, the better and softer they get). Thick hummus mixed with salsa to whatever ratio you like, then spread it on the lasagna noodles. More lasagna noodles. In a pan, saute onion and lots of garlic, then throw in a can of chopped/diced olives, fresh/frozen/canned corn, more tomato sauce or salsa(hopefully with some chunky tomatoes in there!), jalepenos (sp?), refried/mashed pinto beans. Mix all up together and add in LOADS of cumin and other mexican-style spices, or even just a taco or chili seasoning. Layer on. More noodles. Top with a tasty vegan cheese, top with parsley and cover dish with tin foil. Bake at 350/375 F for about 45 min, then take off foil and cook for another 10 min.
