"Panko Stuffed Mushrooms" from Veganomicon tweaked for ease of cooking at 2am.
Original Recipe Unfortunately, I didn't have peanut oil, daikon, sesame oil, or scallions, so i subbed with peanut butter, shallots, olive oil, and chopped spinach. I didn't toast the sesame seeds and I lightly brushed the portabella caps with olive oil. I definitely recommend these, with as much tweaking as I did, they still turned out delicious. The stuffing was moist and held together well for stuffing, the top came out light and crispy, and obviously plating is a non-issue for stuffed mushrooms!
